Wendy's Lemon Meringue Pie

Ingredients

Base

  • ¾ pktMarie biscuits
  • 120 gButter or margarine, melted

Filling

  • 1 tinCondensed milk
  • 2Egg yolks
  • ½ cupLemon juice

Meringue

  • 2Egg whites
  • 2 tbspCastor sugar
Method
  1. Make the base

    Crush the Marie biscuits and mix with the melted butter or margarine.

  2. Press & shape

    Press the biscuit mixture firmly into a pie dish to form the base.

  3. Mix the filling

    Mix the egg yolks with the condensed milk and lemon juice until smooth.

  4. Fill the base

    Pour the filling into the prepared biscuit base.

  5. Whip the meringue

    Beat the egg whites until stiff peaks form. Gradually add the castor sugar and keep beating until the meringue is glossy.

  6. Top the pie

    Spread the meringue over the filling, taking it right to the edges of the pie.

  7. Bake

    Bake at 180°C for 15 minutes, or until the meringue is lightly golden.

  8. Cool & serve

    Allow to cool before serving. Chill in the refrigerator if preferred.
